About Ernestina Eduful
Since earning her degree from the University of Ghana, Ernestina Eduful has built a distinguished career as a Registered Dietitian Nutritionist. With over 15 years of experience in clinical practice, research, and education, she has become a recognized leader in renal nutrition, ketogenic dietary therapy, and general dietetics.
Ernestina was the first dietitian in Ghana to be assigned to a renal unit, where she played a pioneering role in advancing kidney nutrition care. With more than 13 years of dedicated work in renal care, she has supported patients across chronic kidney disease, dialysis, and transplant pathways. Today, she continues to expand her expertise through her appointment with the NHS in the UK, strengthening her international impact in renal dietetics.
Alongside her renal specialization, Ernestina holds credentials in ketogenic nutrition and applies this knowledge to clinical practice, research, and patient education. Her broader expertise in general dietetics includes chronic disease prevention, diabetes management, and lifestyle nutrition, ensuring a comprehensive approach to health and wellness.
Driven by her passion for promoting evidence-based nutrition, Ernestina founded NutriDi/Nutridwellness.com, now rebranded as DietAndKidneys.com. Through this platform, she provides nutritional therapy, dietary education, health promotion, and specialist resources designed to empower patients, caregivers, and healthcare professionals.
Beyond clinical practice, Ernestina is a writer, lecturer, and media contributor. She has published articles, appeared regularly on radio and television to discuss nutrition and lifestyle, and mentored dietetic students as a clinical supervisor in tertiary medical facilities. She continues to inspire future dietitians through teaching and research, while advocating for nutrition policy and corporate wellness initiatives.
Ernestina is licensed by the Allied Health Professions Council, registered with the Ghana Dietetics Association, a member of the International Nephrology Society, and a former member of the British Dietetic Association.
Her professional interests span renal nutrition, ketogenic diets, malnutrition prevention, nutrition advocacy, and corporate wellness campaigns — all fueled by her commitment to improving lives through the power of dietetics.
